Nachos that don't get soggy
Turkey, refried beans, green chilies, etc . Home made cheese sauce.
Cost per person: $3.50 per person because the turkey was free and I canned it for long term storage.

A vegan senior citizen friend ended up with a bunch of free turkeys one holiday. He handed them off to me. I turned three of them into canned turkey meat and bone stock. I gave one away. If you think canned chicken is bad then just imagine how dry canned turkey is. It always needs to be paired with something moist like refried beans or Shakshuka to make it edible. But free protein is free protein.
Most of the cost here was the cheese and chips.

If the nachos aren't soggy they didn't get enough toppings

I've heard if you use fresh fried chips the don't get soggy but I just toast my regular tortilla chips in the toaster oven and that seems to make them hold up really well :)

I always heat them up in the oven on a baking sheet.

Does dip that thick not break the chips whenever you try to scoop?

Not an issue unless you have unusually thin chips.

Yeah, I know what queso is and it doesn't belong ON the nachos, but on the side as a dip of sorts. Just like any guac or sour cream. On the side please. I want nachos, not soggy nachos

Normally I melt the cheese directly on the chips. I only did a small amount of that here. I typically don't go with cheese sauce but because I was doing a meat and beans topping instead of straight meat. Beans always make things soggy.
