There are a few podcasts like that I think. Notably Hello from the Magic tavern. A sitcom, even animated, would be pretty cool!

The Goliath at the end of the bar is a happy genial sort, his comically oversized tankard is a source of recurring jokes

One of my favorite Japanese dramas, Isekai Izakaya Nobu, based on an anime of the same name, has a plot kind of like this. Lots of fun.

I played a RPG in IRC back in high school that was essentially just that. Like 90% of the game was just hanging out in the tavern just talking about in-world politics and drama.
