    Syncthing is just such a great sync tool. Best alternative to it is Resilio Sync. They each have their pros/cons.

  • Interestingly recent research is starting to show we have a hormonal response based on the perceived sweetness of what we eat. It's quite possible these alcohols and even things like Splenda, etc, are no better than actual sugar.

  • It means that mechanically it can't bind with dextrose ("right handed" sugars) to form crystals. Think of the game Tetris, and how you sometimes get an "L" shaped piece - that's your dextrose, and it's mirror - that's the invert. They don't fit into the same spaces, so can never neatly "bind".

    Corn syrup is an invert, and used to prevent sugar crystallization in things like caramel or even ice cream.

    It takes a very small amount of an invert sugar in a recipe (maybe 10%, depending, but I forget) to prevent crystallization from starting.

    Episode 25 of Good Eats, "Citizen Cane", has a great explanation by a food chemist, and Alton Brown demonstrates it while making caramel.

    (I may misremember some of this, so any food chemists please clarify as needed).

    This is where learning how to rebuild your own batteries cones in. Nearly all of them use multiple 18650 batteries, which cost about $2 each online.

    I've rebuilt a few for my power tools. Larger ones cost about $10-$15 to rebuild. And newer batteries have greater capacity too.

  • Having worked in restaurants for years and been to multiple health and safety classes in multiple states, I call bullshit.

    Washing chicken spreads bacteria all over everything wherever it's done: the walls, floor, ceiling. Do you sanitize the ceiling after you do this?

  • Yea, there was a short series a few years ago with a cute blonde (hey, she gets guys to watch).

    She visited a lab and demonstrated very clearly why washing chicken is a bad idea.

    And how much difference soap makes when washing your hands, especially after handling something like chicken.

    She also covered a bunch of chemical uage from the Victorian era.

  • Suppressor Maximum Decibel Reduction

    Totally off the wall question, which I realize probably isn't very meaningful, but I was watching a movie where a character was using a suppressed rifle. Looked like an AR/.223 (I assume).

    Well it got me thinking - how much can a given gun be suppressed (decibel reduction) before performance is significantly reduced (I assume it must impact performance, even if just a little since it's attenuating sound waves, which are energy, but what do I know?).

    I'm sure it varies by round/load, barrel length, etc, so let's assume a subsonic .223 round in a 14" barrel (is that a common lenth?). Or if you know a specific case that's fine too.

    Surely there are reasons why a given suppressor is chosen for a specific use case, and I don't know enough to see that (diminishing returns for length/weight?)

    I tried asking chatgpt, but it just returned generic suppressor info.
