Pesto a la Pedro, a delicious dish we have eaten so many times in my family
cross-posted from: https://gregtech.eu/post/6538495
this is the final product, really the best pasta I ever had.
[Recipe] [Vegetarian] My wife calls it Zwatchke Wähe, I call it plum pie for dinner
Crust, mix 200g flour (I used 50/50 spelt and ap,) and 1 tsp salt, smoosh in 75g cold butter, then add 1dl ice cold water and mix until just combined. Form into disk and refrigerate at least 30 minutes. Roll out to pan size and dock with a fork. Back in fridge.
Guss, 2dl milk, 100g Greek yogurt (or quark if you can get it, cream works too), 2 eggs, 1 tsp vanilla sugar, beat until well combined.
Split and stone 1kg Zwatchke (aka prunes or Italian plums. Or really any stone fruit apricots are particularly good).
Cover the bottom of the crust with 2-3 tbsp ground nuts (I used hazelnuts, but almonds, walnuts or pecans all work,) arrange the fruit, and pour over the guss.
Cook in a preheated 425f oven for 45 - 60 minutes, until the center jiggles.
Let cool at least slightly, but it's good hot, warm, or cold.
En guete!
favorite breakfast recipes?
was just wondering if anyone had any great homemade breakfast recipes to share! I'm notoriously picky but wanted to start off by sharing my favorite baked oatmeal. a family member got it's recipe from a bed and breakfast, and I'm obsessed with it.
bed and breakfast oatmeal
- 3 cups oatmeal
- 1 cup brown sugar
- 1 cup milk
- 1 cup oil
- 2 eggs
- 2t baking powder
- dash of salt
- mix together and pour into casserole dish
- bake at 375 degrees for 40-45 minutes
some optional things I've taken to adding are walnuts, vanilla extract, almond extract, and/or cinnamon. if you add the extracts, I would recommend adding a bit more oatmeal to compensate. and if the middle of it doesn't seem quite baked (I've had this issue before when I'm too eager to eat it!) then I would let it sit outside the oven for like 5 minutes or so.
I've also shared these breakfast cookies before as well, but I thought I'd share them again.

Spiced Cranberry-ginger sauce (good for Turkey, Cocktails, and Veg)
I wasn't ready to deal with Thanksgiving when we had the post a week ago, but now I am.
Every year I buy fresh cranberries and make a tangy/spicy/sour sauce that I adore and put on everything. The old polish folks in the family won't eat it. Too spicy. My better half uses it for everything from tofurkey topping to spice for banana smoothies.
It is sort of a combo of the following recipes:
- https://masalaandchai.com/spiced-ginger-cranberry-sauce/#recipe
- https://www.splendidtable.org/story/2013/11/12/spiced-cranberry-sauce
Stuff: - 12-16 ounces cranberries, bruised ones discarded, rinsed and drained - small amount of water - 1/4-1/2 cup honey - 1/8 teaspoon salt - 1/4 cup frozen orange juice concentrate and/or a juiced orange and its zest - 1 inch (1/2-1 tablespoon) grated fresh ginger or to taste - 4 green cardamom pods OR 1/2 teaspoon ground cardamom - 2 star anise OR 1/2 teaspoon ground
[Homemade] Egg fried rice! 🍚
No, an egg did not in fact fry this rice. Because it's an egg.
For such a simple dish there's a decent bit of technique and timing involved to execute it 'well'. The main things being:
- not to overload the pan
- cook your add-ins in individual batches.
- have everything prepped before you start
- use day old rice or make sure to dry the rice really well before hand
- do not go too crazy with the amount of add-ins
- use a wok if you can
This can be made on a normal western electric stove but it requires a bit more finesse and waiting for the pan to recover its heat before moving onto the next step as we don't have a 15k BTU jet burner. I've personally just moved to making this on a little cheap portable gas stove because it allows for better control over the temp and also so I don't have to worry about smoking out the house.
While there is a certain dogma online about what fried rice is and isn't. It
[Homemade] Carnitas Tacos w/ pickled red onions and Jalapeno Crema
Crema recipe Used this is as base and then added powdered jalapeno
Pickled red onions I like reducing the amount of vinegar and adding in some lime juice for these
This is great for a group meal or freezing the pulled pork before the crisping step!

[Homemade] Tori Paitan Ramen 🍜
For those unfamiliar with Tori Paitan ramen it's the brother of tonkotsu ramen just subbing in chicken instead of pork when making the broth!
This is defiantly a weekend only meal unless you've broken up the prep across the week. There are some shortcuts used to help reduce time and make it more feasible for a home cook to do, such as using a pressure cooker to reduce overall cooking time for the stock base or utilizing sous vide to handle the Chashu pork. Included are the recipes I used and any deviations I made. Also I will warn you, if you do not commonly cook Japanese dishes you will need to find a lot of uncommon ingredients (Mainly for the Tare and aroma oil) But after that you will have a very nicely stocked pantry for other dishes!
Making this while tedious really made me appreciate good ramen shops.
- Soup Base - While this portion of the recipe calls for the leftovers of another recipe, I opted to just use the fresh ing
Avocado Endive Cups with Salsa
I jazz up guacamole by serving it atop endive leaves. Add a brilliant red pepper salsa, and you’ve got a standout appetizer. —Gilda Lester, Millsboro, Delaware
Just saw this recipe for hors d'oeuvres that sounds amazing! Anyone else have quick and healthy options for appetizers?
[BBQ] Charcoal-Grilled Barbecued Chicken Kebabs
Saturday, I made these Charcoal-Grilled Barbecue Chicken Kebabs. I think they turned out well. I used chicken thighs instead of chicken breasts. Also used metal skewers and grilled over a charcoal grill.
Tagging posts in Food and Cooking
We could tag the titles of posts, for types of post or food, say [BBQ] at the beginning then space and the title. I saw others are using [Homemade] which is awesome. By having it at the beginning it's easier to scan. Maybe another for [Cookbook] -- any other tag examples we could do?
Update 2023/07/27:
- If your post includes a recipe please tag [Recipe] at the beginning of the title.
- If your post is something you cooked, [Homemade]
- If your post includes external resources (cookbooks, etc... ) [Resource]
- If your post is something you just ate [Foodie]

[BBQ] Slow-Cooker Memphis-Style Wet Ribs
Made the Slow-Cooker Memphis-Style Wet Ribs recipe from Cook's Country today. Used Sweet Baby Ray's for the sauce instead of making my own. Turned out amazing though!
