[Recipe] [Vegetarian] My wife calls it Zwatchke Wähe, I call it plum pie for dinner
Crust, mix 200g flour (I used 50/50 spelt and ap,) and 1 tsp salt, smoosh in 75g cold butter, then add 1dl ice cold water and mix until just combined. Form into disk and refrigerate at least 30 minutes. Roll out to pan size and dock with a fork. Back in fridge.
Guss, 2dl milk, 100g Greek yogurt (or quark if you can get it, cream works too), 2 eggs, 1 tsp vanilla sugar, beat until well combined.
Split and stone 1kg Zwatchke (aka prunes or Italian plums. Or really any stone fruit apricots are particularly good).
Cover the bottom of the crust with 2-3 tbsp ground nuts (I used hazelnuts,but almonds, walnuts or pecans all work,) arrange the fruit, and pour over the guss.
Cook in a preheated 425f oven for 45 - 60 minutes, until the center jiggles.
Let cool at least slightly, but it's good hot, warm, or cold.

Cold Brew Coffee Concentrate 🥤☕
This fancy cold brew dispenser makes me happy all summer. It's really well engineered, so you can tilt the steeper and get the last drop of of goodness out :)
Obviously, you do not need any fancy equipment to make cold brew: Steep coarsely ground coffee in cold water (1:5 ratio) for 12-24 hrs at room temperature and strain. Then store in the fridge and sip delicious iced coffee all hot summer day long, until you jitter yourself into bed and realize that wasn't conducive to a restful night's sleep.
The benefits of cold brew are less acidic coffee, time saved, because you can just fill the concentrate up with (cold or hot) water and/or milk, plus it is easy to adjust the strength of your coffee that way.
[Homemade] Egg fried rice! 🍚
No, an egg did not in fact fry this rice. Because it's an egg.
For such a simple dish there's a decent bit of technique and timing involved to execute it 'well'. The main things being:
- not to overload the pan
- cook your add-ins in individual batches.
- have everything prepped before you start
- use day old rice or make sure to dry the rice really well before hand
- do not go too crazy with the amount of add-ins
- use a wok if you can
This can be made on a normal western electric stove but it requires a bit more finesse and waiting for the pan to recover its heat before moving onto the next step as we don't have a 15k BTU jet burner. I've personally just moved to making this on a little cheap portable gas stove because it allows for better control over the temp and also so I don't have to worry about smoking out the house.

[Homemade] Tori Paitan Ramen 🍜
For those unfamiliar with Tori Paitan ramen it's the brother of tonkotsu ramen just subbing in chicken instead of pork when making the broth!
This is defiantly a weekend only meal unless you've broken up the prep across the week. There are some shortcuts used to help reduce time and make it more feasible for a home cook to do, such as using a pressure cooker to reduce overall cooking time for the stock base or utilizing sous vide to handle the Chashu pork. Included are the recipes I used and any deviations I made. Also I will warn you, if you do not commonly cook Japanese dishes you will need to find a lot of uncommon ingredients (Mainly for the Tare and aroma oil) But after that you will have a very nicely stocked pantry for other dishes!
Making this while tedious really made me appreciate good ramen shops.

"Tiktok" Pesto Eggs
Had some Pesto left over from dinner, decided to try an old tiktok trend. You just coat a frying pan with pesto, and on a medium low heat just crack some eggs into it and fry them in the pesto. Super easy and super tasty!

Roast duck with parmesan garlic pasta
Every now and then my grocery has a frozen duck with the chickens/turkeys so this is a kinda special/unusual meal for me. I do a honey, lemon, balsamic glaze on the duck and it comes out delicious. The recipe I follow is here!

- Dried Chickpeas (soaked overnight)

Grind the chickpeas in a food processor until fine but not pastey and let them sit in the fridge for about 15 min. Mix in the spices and optionally herbs. Bring your falafel into shape and deep fry.
