That was a wild ride, but it stuck the landing.

I mean the title question would be super illegal. The thing he did is probably fine if its in a bag and especially fine if he didnt hit anyone with it.
- It probably could constitute assault, even without hitting someone

- Throwing something at a person is battery, pretty much everywhere in the US.
  You could also make an argument that it's "discharging bodily fluids" or some weird kind of "disturbing the peace" type of offense predicated just on disturbing other people around you, but it definitely would be battery.

Eggs would be more akin to a fetus than raw chicken.
Maybe setup a food truck across the street making breakfast sandwiches and see how many of those protestors buy. Then donate all the profits to the clinic.

To the original question:
Would that be considered desecrating a corpse?
- It depends on the age of the fetus, and the local laws. In the Netherlands where I live the fetus is by law not considered a baby (not sure on the terminology) until the 24th week of pregnancy, so anything before that is considered not to be a human body (again, by law).

So the real question is whether it's illegal to throw a baggie full of raw chicken.
