Did you see the stinger after Deadpool 2? They handled that issue by showing it's a different Deadpool.

I'm not gonna rewatch it right now, but IIRC there's either a mid- or post-credit scene wherein the decapitated head opens its eyes and looks at the camera. Cutting his head off would not kill Deadpool, for crying out loud!
Deadpool wouldn't die from mere decapitation in fairness but yeah....I think it's 'alternative reality deadpool' (lazy writing)
