Thanks for posting! Had a look through and didn't realise Torrey Peters had released a new book, so I'll be reading that next! Also, to recommend a book I've read recently: To Be A Girl by Alexandra Hamer. It's a really cool novel about a trans girl in Victorian England which I thought was fantastic.
There's no one thing that defines sex, that's what makes it so complicated. What is often thought of as "biological sex" are two clustered sets of checkboxes (e.g chromosomes, genitalia, secondary sex characteristics, primary sex hormone), but people often have a mixture from both lists.
