It's my understanding that Redfall was largely at the publisher's feet. Bethesda was looking for a big buyout, and live service crap was the big thing. They told Arkane Austin what to make despite it not being what the studio knows how to make.
seriously, the amount of games they've developed themselves, rather than being made by a studio that they bought during development is not that high, and so far since 2010 is... not many. most of their actual in house stuff (by "EA Studios") the past 20 years stuff is things like Scrabble for XBLA, Sudoku for iOS, Soviet Strike for the playstation network...
